About Gina

For many years, I have dedicated my life to improving the taste of low protein foods. My goal was to make it possible for my son not to hate his diet, but rather to look forward to his everyday meals as we all do.

Through my many trials and errors with tear filled eyes, completely frustrated, and at times very angry it was the love for my child that gave me the perseverance I needed to create these recipes and complete this cookbook for him to always have and use as a guide if ever I am not here to care for him.

On the pages ahead, you will come to know all Anthony's favorite low protein recipes. I am also hopeful that this cookbook will find its way to help "PKU'ers" and "PKU families" everywhere who are trying so desperately to stay on diet, and enjoy their meals.
