80g low protein mix 20g custard powder (not custard mix) 50g hard margarine 1/2tsp baking powder 25g caster sugar 1 medium sized ripe banana, about 75g 40mls Calogen liquid 60mls water
In a bowl, mix together the low protein mix and custard powder. Rub in the margarine until it resembles bread crumbs. stir in the baking powder and sugar. Roughly mash the banana with a fork and stir it into the mixture. Make a well in the middle and pour in the Calogen liquid and water. Mix quickly with a metal spoon to form the batter. Do not worry if you think the batter is too runny,leave it to rset for a couple of mimutes. Meanwhile,put a griddle or heavy frying pan on to heat. Lightly grease it with just a little oil. take spoonfuls of the batter and drop it onto the hot pan. Gently ease it into a round shape. Leave to cook over a gentle heat for 1 or 2 minutes until the undersaid is lightly browned. Turn the cakes over and cook for a further 1 to 2 minutes until they are firm and cooked through.
