Ok, I'm posting this blog because I can't find how to post a new forum topic. If anyone knows, please post a comment with instructions alt. I have been invited to a Puerto Rican Christmas dinner by mutual friends of the host, which I would like to attend. The dishes the hostess (who I've never met) will be serving include rice & beans, ham, and flan. I've been asked to bring a dish as well. I might bring sweet plantians, but I'm looking for another idea for Puerto Rican type something PKU friendly dish that is more filling in case my dishes are the only food I can eat. Any ideas PLEASE!

    Hey, perfect timing! I was just about to log off when i saw this, anyways, I’m part of a PKU recipe group on facebook, and a lady has posted up some yummy looking PKU international style dishes, and I remember seeing 2 different PKU flans up there, I will ask for the recipe.

    Creamy Mushroom and Leek Flan

    ‎200 g of Flour, 50g Hard margarine, 50g Lard, Cold water to mix. Place Flour in a large Bowl, cut margerine and lard into small peices and rub into the mix until texture resembles breadcrumbs, stir in sufficient wateer to give a firm manageable dough, tranfer the dough to a surface lightly dusted with flour and lightly knead the dough for 30 seconds until smooth, roll out dough on a surface lightly duted with flour, your dough is now ready or if u want you can add grated orange or lemon rind, or cinnamon nutmeg or mied spice or 1tsp curry powder. To make the Mushroom and leek filling you need 100g sliced leeks, 4 tbsp olive oil, 1 -2 cloves garlic crushed, 225g mushrooms and 250g -300g of white lasagne sauce* heck protein levels. Hat oil in a pan, add the garlic and leeks and fry for 2-3 mins, add mushrooms and continue to fry for another 2-3 mins until mushrooms are soft, stir in sauce add filling to pastry case preheat oven to 180oc/300of/gas mark 4 for 10-15 mins till pastry browns and is cooked.

    Caramalized Red Onion Flan

    just same pastry recipe as above but to make the filliny you eed 4 medium red onions peeled and sliced 1tbsp of olive oil, 1 tbsp of caster sugar, splash of balsamic vinegar, a few sprigs of thyme, leaves stripped. Pre heat oven to 180oc/350of/gas 4 heat oil in a pan, add sliced onions an cook gently for approx 15 mins or untill well browned add the sugar balsamic vinger and thyme and coninue to cook for further 5 mins add the onion mixture to the tart and bake in the oven for 10-15 mins until pastry is slightly brownded and cooked x you can also add some cranberry sauce at the bottom of pastry before adding ur filling
