Super Bowl Party……

So, the super bowl was this weekend (boo the colts lost) I was pretty happy with myself staying on diet. I even made a 7 layer dip with all sorts of bad stuff we can’t have (my boyfriend loves it) I made my own little side with all the things I could have and you know what it was pretty good. When I got asked why I have my own I just said “oh I don’t like beans.” Which was so much easier then going into the whole I have PKU speech. I just didn’t want to get into that I was there to enjoy the game like everyone else not explain my life to everyone. But, I am super excited I have my Dr. Appt Thursday @ 8am with my specialist so, I will see where I stand and hopefully get some new formula maybe some low pro food too! alt

    Congrats on sticking to your diet! I’m still doing pretty good too…other than my huge bowl of curry fried rice w/my friend the other day (but i had been dying for Thai food for awhile). I’m taking a really math based class right now & I love that I can concentrate on the class without losing focus and getting really impatient. All the motivation in the world to stick to this diet! Hope your dr’s appt goes well!

    Thanks you two and Katie you are right it is amazing how much better I have been feeling. Everyone has been noticing it as well so hopefully I can keep it up :)

    Thats awesome! I make stromboli (stuffed bread with pepperoni, ham, salami, peppers, cheese) for my boyfriend and his friends when we get together, and I made it for the superbowl this year too. Except this time instead of not eating it, I whipped together a LoPro dough and made myself a side one! I put eggplant and other veggies and sauce in it and it was delicious. I did get questions about why there were two and I answered them… most people “knew I had dietary restrictions but weren’t sure what they were” so I didn’t mind… it was definitely nice to not just hover over the veggie plate and have a substantial appetizer alongside my friends : ) definitely worth the extra prep time for me… I probably would have wanted to cheat so bad if I didn’t have something there!!
